Artisanal Charcuterie Board – includes a variety of cured meats and domestic & imported soft and hard cheeses. Includes grapes, jam, figs, assorted nuts, French bread slices, and crackers. Smoked Salmon Board – sliced smoked salmon, cream cheese, capers, diced red onion, rye bread, bagel thins. $5 per person.
Cold Steamed Shrimp Display – extra-large tail-on shrimp, steamed, chilled, and displayed on ice with fresh lemon, horseradish, and cocktail sauce. $2 per shrimp.
Greek Mezza – includes homemade hummus and is served with cut vegetables and pita points. Customizable. $3 per person. Homemade Baba Ghanoush may be added for an additional charge.
Caprese Spears – skewered mini mozzarella ball, grape tomato, basil with balsamic reduction. $2 each.
Crudité – cherry tomatoes, cucumber, assorted red, yellow, and orange peppers, carrots, celery, and radish served with hummus or dressing. $3 per person.
Endive with Beet & Blue Cheese – endive leaves topped with chopped, roasted red beets and crumbled imported blue cheese and topped with chopped roasted walnut pieces. Served in a teardrop spoon. $3 per endive boat.
Mini Phyllo Cups – choice of melted brie & bacon jam, chicken salad, mushroom pate, bacon-crack, or butternut squash. $2 per phyllo cup.

Traditional Taquitos – Crispy homemade Taquitos (also called Rolled Tacos) made with seasoned shredded beef or chicken, shredded cheese, and rolled in corn or flour tortillas. $2 per 3" taquito.
Buffalo Chicken Taquitos – Crispy homemade buffalo chicken Taquitos served with blue cheese dip and celery sticks. It can be made with flour or corn tortillas. $2 per 3" taquito.

House-made Meatballs – 2 oz. ground beef & pork with seasoning of choice (Greek, Italian, Classic). Sautéed brown and braised tender. Choice of sauce (Chimichurri, Greek, Swedish, Marinara, or BBQ). $2 per meatball. Minimum order of 20 meatballs. OR 1 oz. beef meatballs @ $1 per meatball.

Cuban Sliders – baked Cuban sliders with honey-baked sliced ham, Swiss cheese, sweet pickle & mustard sauce on Hawaiian rolls. Served warm, $2 per slider. Minimum order of 16 sliders.
TMM "White Castle" Cheeseburger Sliders – baked hamburger, cooked diced onion, American cheese, pickle on Hawaiian rolls basted in butter & garlic glaze. Served warm, $3 per slider. Minimum order of 16 sliders.
Roast Beef Sliders – beef slow-cooked on the grill with mild or spicy seasoning. Sliced thin and served on a white roll. May add horseradish or mustard sauce. $4 per slider. Minimum order of 30.

Petite Bistro Filet – cooked sous vide to MR – M, sautéed in butter and EVOO, seasoned, and sliced. Served warm or room temperature with horseradish and mustard. $22 per pound a la carte.
The dinner platter includes eight oz. of filet per person, a choice of sauce, roasted baby potatoes, and sauteed mushrooms - $24 per person.
Beer & Balsamic Vinegar Braised Beef Short Ribs – meaty bone-in short ribs braised in a dark beer and balsamic vinegar sauce until they are fall-off-the-bone tender. Served with parsnip puree or potato puree - $35 per person.
Argentinian Beef – marinated skirt steak served with green chimichurri sauce. $22 per pound a la carte. The dinner platter includes six oz of skirt steak, chimichurri, and herbed rice – $22 per person.
Frenched Chicken Breast – Crispy skinned, roasted, 6 oz. chicken served with roasted carrots, pearl onions, and tri-colored potatoes. Served with a tarragon-mustard sauce – $22 per person.
Coq au Vin – Deconstructed. Chicken thighs, bone-in, are braised in red wine and cognac. Served with roasted tri-color carrots and sauteed mushrooms. Perfectly paired with creamy goat cheese polenta - $22 per person.
Chicken Parmesan – tenderized breaded chicken breasts (or skinny, non-breaded chicken breasts) baked with tomato sauce and topped with parmesan and mozzarella cheese blend. $110, ½ sheet pan (serves 6-8). The dinner platter includes chicken parmesan & broccoli - $19 per person.
Chicken Piccata – thin chicken breasts coated in flour, sautéed, and baked in white wine, lemon, and capers gravy. $110 per ½ sheet pan (serves 6-8). The dinner platter includes chicken piccata & seasonal vegetables or green rice - $19 per person.
Grilled, Sliced, Rosemary Pork Tenderloin – pork tenderloin marinated in garlic, olive oil, rosemary, and sea salt. Grilled and served warm or room temperature, sliced. Garnished with tomato-chili chutney or other specialty sauce, as requested. $18 per pound a la carte. The dinner platter includes six oz. of tenderloin per person, mashed cauliflower, & tomato-chili chutney - $18 per person.
Tuscan Shrimp, Salmon, or Chicken with Spinach Cream Sauce – jumbo shrimp, salmon filet, or chicken breasts, sautéed and served with spinach, roasted tomato, and fresh basil cream sauce over a choice of zucchini spaghetti, spaghetti squash, GF pasta, or regular pasta. A la carte price depends on protein; please inquire. The dinner platter is $18 - $20 per person, depending on the choice of protein.
Herb & Parmesan Crusted Roasted Salmon – 6 oz. Skinless salmon filet, GF herb & parmesan crust, baked and served with a lemon wedge. $20 per pound a la carte. The dinner platter includes the salmon filet and roasted potatoes - $19 per person.
Slow-Roasted Salmon with Herb Salsa – Salmon filet slow-roasted with herbs and served with fresh herb salsa. $20 per pound a la carte. The dinner platter includes six oz. salmon, herb salsa, and herbed rice – $19 per person.
Thai Curry – red, green, or Massaman sauce with your choice of chicken, beef, shrimp, or vegetable. A la carte price depends on protein; please inquire. The dinner platter includes Thai curry with coconut rice. $17 - 19 per person.
Mixed Green Dinner Salad – mixed greens, dried cranberries, slivered almonds, and a red-wine vinaigrette. $3 per person with an a la carte or prepared meal. Add fried goat cheese ball + $2.
Caesar Salad with Homemade Crouton – $5 per person. Add parmesan disc + $1.
Spinach & Strawberry Salad – season or can substitute with mandarin orange. Served with a poppyseed dressing. $5 per person.
Fattoush Salad – served with grilled pita and Greek dressing. $5 per person.
Lemon Chicken Salad with Asparagus & Sugar Snap Peas – $15 per pound.
Traditional Chicken Salad – $10 per pound.
Compressed Watermelon & Feta Salad – seasonal. Fresh compressed watermelon, feta cheese, black olives, red onion, and mint. $15 per pound. You can substitute goat cheese & basil with balsamic dressing.
Quinoa Tabbouleh – classic Middle Eastern salad upgraded with quinoa. Makes a great vegetarian main course. $5 per person for a side salad and $10 per person for a meal.
Broccoli, Apple, and Walnut Salad – shaved broccoli, Honeycrisp apple, and walnuts tossed in a fresh basil pesto. Dairy Free. $5 per person
Brussels Sprouts Salad with Dried Cherries – shredded Brussels sprouts, pecorino cheese, and toasted pecans, served with lemon and mustard dressing and topped with dried cherries. $5 per person.
Orzo or Basmati Rice Salad – orzo or basmati rice, fresh parsley, toasted almonds, crumbled feta, green onion, and Kalamata olives served with an orange zest vinaigrette. $5 per person.
Delivery – We can deliver charcuterie boards locally for a $10 delivery charge. All other catered foods will be delivered, and a service charge will be applied, as indicated below.
Service Charge – 23% of the total invoice with a minimum of $50, including up to 1 hour of the caterer’s transportation and on-site time. The service charge also covers any incidentals for your event, such as the cost of disposables, catering equipment, etc. It is not a gratuity.
Personal Chef Services – includes 4 hours of chef services in your home for dinner parties of up to 16 people. Delivery, preparation, plating, serving, and clean-up are included, and there is no additional service charge. $200 plus food. $75/hr for additional time on-site.
Other – Inquire into full-service catering, which may include a caterer on-site for the duration of the event, hostess helper(s) for the duration of the event, bartender, equipment rental, service ware rental, and event consulting.
Gratuity – Gratuities are always appreciated but never expected from the chef. Repeat business, referrals, and reviews are also considered a gratuity for small business owners such as myself. However, any supplemental staff, such as servers and bartenders, would appreciate a tip at the end of the event. Although prices vary, it is usual to tip $50 to $100 for bartenders and $25 to $50 per server.
VA Sales & Meals Tax – 6% Virginia Tax will be collected on food and service.
Processing Fees – 4% processing fee will be collected if PayPal, Venmo Retail, or credit card payment.
